  • 3/4 cup chopped English cucumber
  • 3/4 cup shredded carrot
  • 1 yellow bell pepper (chopped)
  • 1/2 cup diced red onion
  • 5 ounces sliced olives
  • 14 ounces cherry tomatoes (halved)
  • 34 ounces turkey pepperoni (quartered)
  • 6 ounces fresh mozzarella (cubed)
  • 1/3 cup light Caesar dressing
  • 1/3 cup light Greek dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the rotini noodles in a large pot of boiling water until al dente. Drain and rinse with cold water to cool.
  2. In a mixing bowl, combine the cooked pasta with cucumber, carrot, yellow bell pepper, red onion, olives, cherry tomatoes, turkey pepperoni, mozzarella cubes, salt, and pepper.
