  • 2 cups coarsely or medium shredded zucchini (packed and not squeezed)
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 3/4 cup honey or maple syrup
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups whole wheat or spelt flour
  • Cooking spray (I use Misto)
  • 1/2 cup walnuts (coarsely chopped, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9 x 5 loaf pan with parchment paper and lightly spray with cooking spray.
  2. In a mixing bowl, whisk together the egg, applesauce, honey (or maple syrup), cinnamon, baking soda, baking powder, and salt until combined. Stir in the shredded zucchini.
  3. Gently fold in the whole wheat flour until just mixed; some lumps are okay.
  4. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  5. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
