  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan.
  2. For the crust, cream together softened butter and sugar until fluffy, then mix in flour and salt until crumbly. Press into the pan and bake for 15 minutes.
  3. Meanwhile, prepare the filling by mixing diced peaches, sugar, lemon juice, and cornstarch in a bowl.
  4. Spread the peach mixture over the baked crust.
  5. In another bowl, whisk eggs, sugar, sour cream (or yogurt), flour, and vanilla until smooth. Pour over the peach layer.
