  • 2 tablespoons butter
  • 5 cloves garlic (minced)
  • 1 medium sweet yellow onion (diced)
  • 2 cups sliced carrots
  • 3 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 can (28 oz) peeled whole tomatoes
  • 1 tablespoon fresh basil (roughly chopped)
  • 1 tablespoon fresh thyme (roughly chopped)
  • 1 tablespoon fresh oregano (roughly chopped)
  • 1 tablespoon fresh rosemary (roughly chopped)
  • 1 tablespoon red apple vinegar

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy (about 10 minutes). Add butter and melt. Stir in fresh herbs and minced garlic; sauté for 2-3 minutes until fragrant.
  2. Add sliced carrots and diced onion; cook until softened (about 10 minutes).
  3. Mix in tomato paste and stir continuously for another 2-3 minutes. Then add flour, chicken broth, and whole tomatoes; smash the tomatoes gently into the mixture.
  4. Stir in red apple vinegar, bring to a boil, then reduce heat and simmer for 30-45 minutes.
  5. Blend the soup until smooth using a blender.
  6. Serve warm divided into bowls with burrata on top.
