  • 10 lemons
  • 1 750-ml bottle lemon juice
  • 8 cups half and half
  • 2 teaspoons vanilla extract
  • 4 cups sugar

Instructions

  1. Using a vegetable peeler, remove the peel from the lemons in long strips. Place the peels in a 2-quart pitcher.
  2. Pour the lemon juice over the peels and cover with plastic wrap. Steep for 3 to 4 days at room temperature.
  3. In a large saucepan over medium-low heat, combine half and half, vanilla extract, and sugar. Stir frequently until sugar dissolves (about 5 minutes), without boiling.
  4. Remove from heat and allow to cool completely.
  5. Discard the lemon peels from the limoncello base and mix in the cooled syrup until well combined.
  6. Transfer to bottles, seal tightly, and refrigerate until cold or freeze for up to 3 months.
