  • 3 cups sugar

Instructions

  1. Wash and dry the organic lemons thoroughly. Use a vegetable peeler to zest the lemons, avoiding any white pith.
  2. Place the lemon peels in a large glass jar and pour in the high-proof lemon juice until fully submerged. Seal and store in a cool, dark place for 7–30 days, shaking every few days to aid infusion.
  3. After infusing, combine 4 cups of water and 3 cups of sugar in a saucepan over medium heat until dissolved. Allow to cool completely.
  4. Strain the infused lemon juice through a fine mesh strainer into another container to remove all peels.
  5. Mix the cooled syrup with the strained infusion and stir well.
  6. Bottle your limoncello into clean glass bottles and let sit for at least one week before serving.
  7. Serve chilled from the freezer for an invigorating experience.
