Ingredients
Scale
- 10–12 organic lemons (zest only)
- 750 ml high-proof lemon juice
- 4 cups water
- 3 cups sugar
Instructions
- Wash and dry the organic lemons thoroughly. Use a vegetable peeler to zest the lemons, avoiding any white pith.
- Place the lemon peels in a large glass jar and pour in the high-proof lemon juice until fully submerged. Seal and store in a cool, dark place for 7–30 days, shaking every few days to aid infusion.
- After infusing, combine 4 cups of water and 3 cups of sugar in a saucepan over medium heat until dissolved. Allow to cool completely.
- Strain the infused lemon juice through a fine mesh strainer into another container to remove all peels.
- Mix the cooled syrup with the strained infusion and stir well.
- Bottle your limoncello into clean glass bottles and let sit for at least one week before serving.
- Serve chilled from the freezer for an invigorating experience.
