  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon almond extract
  • 3 large eggs (room temperature and whisked)
  • 1 cup finely ground almond flour
  • ⅓ cup sliced almonds
  • ⅓ cup honey
  • ⅓ cup water

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare an 8” cake pan with parchment paper.
  2. In a bowl, whisk together all-purpose flour, baking powder, and salt.
  3. Cream unsalted butter and granulated sugar until fluffy.
  4. Mix in vanilla paste and almond extract followed by whisked eggs.
  5. Gradually incorporate dry ingredients and then fold in almond flour.
  6. Pour batter into the prepared pan, top with sliced almonds, and bake for 28-35 minutes.
  7. While baking, prepare honey simple syrup by heating honey and water until combined.
  8. After baking, soak the warm cake with honey syrup. Let cool on a wire rack before serving.
