  • 1¾ cups very cold unsalted European-style butter (cut into pieces)

Instructions

  2. Add bread flour, whole wheat flour, and salt; mix on low speed until combined.
  3. Gradually add softened butter while mixing on medium speed until smooth.
  4. Knead dough until elastic; shape into a ball and refrigerate for at least 2 hours.
  5. Prepare the butter layer by rolling cold butter between parchment paper into a rectangle.
  6. Roll out chilled dough, place the butter layer in the center, fold like an envelope, roll out again, and fold into thirds.
  7. Chill in the refrigerator for another hour and repeat the rolling and folding process multiple times to achieve flakiness.
