  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, optional chipotle chili powder, and pepper.
  2. Marinate the chicken in the mixture for at least 30 minutes or up to overnight in the refrigerator.
  3. Heat a grill pan over medium-high heat; cook marinated chicken for about 5 minutes on each side until it reaches an internal temperature of 165°F.
  4. In another bowl, mix chopped avocados, cherry tomatoes, sweet corn kernels, red onion, jalapeno pepper, cilantro, minced garlic, lime juice, cumin, salt, and pepper to make the avocado salsa.
  5. Serve sliced chicken topped with generous amounts of avocado salsa.
