- 1/4 to 1/2 teaspoon chipotle chili powder (optional)

- 2 medium avocados, chopped
- 1 cup cherry tomatoes, quartered
- Fresh corn from 1 ear sweet corn
- 1/3 cup finely chopped red onion
- 1/2 red bell pepper, chopped
- 1 jalapeno pepper, diced
- 2 tablespoons finely chopped cilantro
- 1 garlic clove, minced
- 2 tablespoons lime juice
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- In a mixing bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, ground cumin, smoked paprika, onion powder, garlic powder, optional chipotle chili powder, and pepper.
- Marinate the chicken in the mixture for at least 30 minutes or up to overnight in the refrigerator.
- Heat a grill pan over medium-high heat; cook marinated chicken for about 5 minutes on each side until it reaches an internal temperature of 165°F.
- In another bowl, mix chopped avocados, cherry tomatoes, sweet corn kernels, red onion, jalapeno pepper, cilantro, minced garlic, lime juice, cumin, salt, and pepper to make the avocado salsa.
