- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 vanilla beans (seeds scraped)
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup brown sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C) and line a cupcake pan with paper liners.
- In a mixing bowl, cream together butter and granulated sugar until fluffy. Add eggs one at a time, mixing in vanilla beans.
- In another bowl, whisk flour and baking powder together. Gradually add to wet ingredients alternately with sour cream until just combined.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
- While cooling, beat cream cheese with brown sugar and remaining vanilla beans until smooth.
- Once cooled, make wells in the center of each cupcake and fill with cheesecake mixture. Sprinkle brown sugar on top and caramelize using a kitchen torch or broiler.
