  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 vanilla beans (seeds scraped)
  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C) and line a cupcake pan with paper liners.
  2. In a mixing bowl, cream together butter and granulated sugar until fluffy. Add eggs one at a time, mixing in vanilla beans.
  3. In another bowl, whisk flour and baking powder together. Gradually add to wet ingredients alternately with sour cream until just combined.
  4. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  5. While cooling, beat cream cheese with brown sugar and remaining vanilla beans until smooth.
  6. Once cooled, make wells in the center of each cupcake and fill with cheesecake mixture. Sprinkle brown sugar on top and caramelize using a kitchen torch or broiler.
