  • 3 Pounds Beef Stew Meat (or Lamb)

  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 2 teaspoons Fresh Rosemary
  • 1 teaspoon Dried Thyme
  • 4 Cups Beef Broth
  • 5 Each Carrots (peeled and cut into chunks)
  • 1 Cup Frozen Peas
  • 2 Each Bay Leaves
  • Mashed Potatoes

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. In a Ziploc bag, combine beef stew meat with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme; shake well.
  3. Sear the seasoned meat in the hot oil until browned on all sides.
  4. Gradually stir in the beef broth and bring to a boil.
  5. Add carrots and bay leaves; reduce heat to medium-low and cover.
  6. Simmer for about 45 minutes, stirring occasionally.
  7. Add frozen peas 5 minutes before serving.
  8. Remove bay leaves and serve alongside creamy mashed potatoes.
