  • ½ cup unsalted butter (softened)

  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1 cup whipped topping (non-dairy)
  • 1 tsp agar-agar powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the softened butter until creamy. Gradually mix in the dry ingredients until fluffy.
  4. Add eggs one at a time, mixing well after each addition. Pour in the coconut milk and blend until smooth.
  5. Gently fold in the shredded coconut.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
