  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 cup whole milk (for custard)
  • 1/4 cup granulated sugar (for custard)
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips (for glaze)
  • 2 tbsp coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, mixing well.
  4. Gradually mix in dry ingredients and milk until smooth.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
  6. For the custard, heat milk in a saucepan. Whisk together sugar and cornstarch; gradually add hot milk while whisking. Return to heat until thickened; stir in vanilla extract and let cool.
  7. Cut out centers of cupcakes and fill with custard.
  8. For glaze, melt chocolate chips and coconut oil in the microwave, stirring until smooth. Drizzle over cupcakes.
