- 1/2 cup whole milk
- 1 cup whole milk (for custard)

- 2 tbsp cornstarch
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips (for glaze)
- 2 tbsp coconut oil
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, mixing well.
- Gradually mix in dry ingredients and milk until smooth.
- Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Let cool completely.
- For the custard, heat milk in a saucepan. Whisk together sugar and cornstarch; gradually add hot milk while whisking. Return to heat until thickened; stir in vanilla extract and let cool.
- Cut out centers of cupcakes and fill with custard.
- For glaze, melt chocolate chips and coconut oil in the microwave, stirring until smooth. Drizzle over cupcakes.
