- 1 cup unsalted roasted cashews
- 4 cloves fresh garlic (minced)
- 1-inch piece of fresh ginger (grated)
- 1 cup bell peppers (mixed red and green, sliced)
- ¼ cup low-sodium soy sauce
- ½ cup vegetable broth
- 2 tsp cornstarch mixed with 2 tsp water
- Salt and pepper to taste
- 2 tbsp cooking oil
Instructions
- Prepare all ingredients: dice the chicken, slice the bell peppers, and mince the garlic and ginger.
- In a large skillet over medium-high heat, add cooking oil and cook the chicken until golden brown (about 5 minutes). Season with salt and pepper.
- Remove the chicken from the skillet. In the same pan, sauté garlic, ginger, and bell peppers for about 3 minutes until tender-crisp.
- Mix soy sauce, vegetable broth, and cornstarch in a bowl. Pour into the skillet with veggies; stir until the sauce thickens.
- Return the chicken to the skillet along with cashews; mix well to coat everything in sauce.
- Serve over rice or noodles, garnished with extra cashews if desired.
