  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup fresh herbs (basil, thyme, oregano), chopped
  • 1/2 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the chicken breasts under cold water and pat dry.
  2. In a mixing bowl, combine olive oil, garlic, herbs, lemon juice, salt, and pepper; whisk until blended.
  3. Place chicken in a resealable bag or shallow dish; pour marinade over it and coat well. Marinate for at least 1 hour in the refrigerator.
  4. Preheat grill or oven to 400°F (200°C). Grill chicken for 6-8 minutes per side until cooked through (internal temperature of 165°F) or bake on a baking sheet for about 25-30 minutes.
  5. Let chicken rest for 5 minutes before slicing; garnish with fresh herbs if desired.
