  • 1 pound lean ground beef or turkey
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups fresh spinach
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
  2. In a skillet over medium heat, brown the ground meat until cooked through. Drain fat and mix in marinara sauce, oregano, and basil. Simmer for a few minutes.
  3. Cook lasagna noodles according to package instructions until al dente (skip this step for no-boil noodles).
  4. Assemble layers: start with noodles, half of the meat sauce, dollops of ricotta mixed with spinach, and sprinkle with mozzarella. Repeat layers, ending with noodles topped with remaining mozzarella and Parmesan.
  5. Cover with foil and bake for 25 minutes; uncover and bake an additional 15 minutes until golden brown.
  6. Let it rest for 10 minutes before slicing. Serve hot, optionally with extra marinara on the side.
