  • 2 medium Russet potatoes (about 1 lb), diced
  • 1 lb ground chicken or beef
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup bell peppers, diced (any color)
  • 1 small red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 avocado (sliced)
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Toss diced potatoes with olive oil, salt, pepper, and half of the taco seasoning. Spread on a baking sheet lined with parchment paper.
  3. Roast potatoes for 25-30 minutes until golden brown, stirring halfway through.
  4. In a skillet over medium heat, cook ground meat with chopped onion and bell peppers; add remaining taco seasoning and cook until browned (7-10 minutes).
  5. Assemble bowls by placing roasted potatoes at the bottom and topping with seasoned meat mixture.
  6. Add avocado slices, sour cream or Greek yogurt, fresh cilantro, and lime juice before serving.
