- 1 packet taco seasoning (or homemade blend)

- Juice of 1 lime
- 2 tbsp olive oil
- 1 avocado (sliced)
- ½ cup sour cream or Greek yogurt
Instructions
- Preheat oven to 425°F (220°C).
- Toss diced potatoes with olive oil, salt, pepper, and half of the taco seasoning. Spread on a baking sheet lined with parchment paper.
- Roast potatoes for 25-30 minutes until golden brown, stirring halfway through.
- In a skillet over medium heat, cook ground meat with chopped onion and bell peppers; add remaining taco seasoning and cook until browned (7-10 minutes).
- Assemble bowls by placing roasted potatoes at the bottom and topping with seasoned meat mixture.
- Add avocado slices, sour cream or Greek yogurt, fresh cilantro, and lime juice before serving.
