  • 2 large Russet potatoes (about 12 oz each)
  • 1 cup fresh broccoli florets
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp unsalted butter
  • 1/2 cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with foil.
  2. Wash the russet potatoes, poke holes with a fork, rub with olive oil, and sprinkle with salt. Bake for about 45 minutes until tender.
  3. Steam the broccoli florets for about 5 minutes until bright green and slightly tender.
  4. Once the potatoes are done, cool slightly, slice in half lengthwise, and scoop out most of the flesh into a bowl.
  5. Combine potato flesh with butter, sour cream, cheddar cheese, steamed broccoli, garlic powder, salt, and pepper; mash until well mixed.
  6. Refill potato skins with the mixture and bake for an additional 15-20 minutes until golden brown.
