  • 2 cups elbow macaroni
  • 1 cup cooked chicken breast, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup Greek yogurt
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the macaroni in salted water until al dente. Drain and rinse under cold water to cool.
  2. While pasta cools, chop the red onion, bell pepper, halve the cherry tomatoes, and prepare corn.
  3. In a large bowl, whisk together Greek yogurt, lime juice, olive oil, and cilantro. Season with salt and pepper.
  4. Add cooled macaroni to the dressing; mix well. Fold in diced chicken and all veggies until evenly coated.
  5. Cover and chill for at least one hour before serving to allow flavors to meld.
