- 1 cup cooked chicken breast, diced
- 1 cup cherry tomatoes, halved
- 1 cup corn (fresh or frozen)
- 1 red bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1 cup Greek yogurt
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp olive oil
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Cook the macaroni in salted water until al dente. Drain and rinse under cold water to cool.
- While pasta cools, chop the red onion, bell pepper, halve the cherry tomatoes, and prepare corn.
- In a large bowl, whisk together Greek yogurt, lime juice, olive oil, and cilantro. Season with salt and pepper.
- Add cooled macaroni to the dressing; mix well. Fold in diced chicken and all veggies until evenly coated.
- Cover and chill for at least one hour before serving to allow flavors to meld.
