Description

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup fruit jam (raspberry or strawberry)
  • 1 cup powdered sugar
  • 2 tbsp milk or plant-based milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, cream the softened butter and remaining sugar until light and fluffy.
  4. Add vanilla extract to the butter mixture, then gradually mix in the dry ingredients until just combined.
  5. Spread half of the dough into the prepared baking dish. Layer with fruit jam and top with remaining dough.
  6. Bake for 25-30 minutes until golden brown. Let cool before glazing with a mixture of powdered sugar and milk.
