- 1 cup low-sodium soy sauce
- 1 cup pineapple juice

- 1 can (20 oz) pineapple chunks, drained
- 2 tbsp cornstarch mixed with 2 tbsp water (for thickening)
Instructions
- Dice the chicken thighs and mince the garlic.
- In a bowl, whisk together the soy sauce, pineapple juice, brown sugar, minced garlic, and grated ginger.
- Place the diced chicken in the slow cooker and pour the sauce over it.
- Add the drained pineapple chunks on top.
