Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup low-sodium soy sauce
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 can (20 oz) pineapple chunks, drained
  • 2 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions

  1. Dice the chicken thighs and mince the garlic.
  2. In a bowl, whisk together the soy sauce, pineapple juice, brown sugar, minced garlic, and grated ginger.
  3. Place the diced chicken in the slow cooker and pour the sauce over it.
  4. Add the drained pineapple chunks on top.
  5. Cover and cook on low for 6 hours or on high for 3 hours.
  6. In the last half hour of cooking, stir in the cornstarch slurry to thicken the sauce.
  7. Serve over rice or noodles with an extra drizzle of sauce.
