Ingredients

Scale
  • 2 cups granulated sugar
  • 1 cup heavy cream
  • ½ cup unsalted butter
  • 1 cup pecan halves
  • 2 tsp pure vanilla extract
  • 2 tsp agar-agar powder

Instructions

  1. Prepare your workspace by gathering a saucepan, wooden spoon, and candy thermometer.
  2. In the saucepan over medium heat, combine sugar and heavy cream. Stir constantly until the sugar completely dissolves.
  3. Once boiling, add unsalted butter and vanilla extract. Stir until melted and well combined.
  4. Gradually sprinkle in agar-agar while stirring vigorously to prevent clumping. Cook until the mixture reaches 240°F (115°C).
  5. Remove from heat and fold in pecan halves evenly throughout the mixture.
  6. Pour into a greased baking dish or silicone mold and let cool at room temperature for 1-2 hours until set. Cut into desired shapes.
