Ingredients
- 8 oz jar oil-packed sun-dried tomatoes (chopped)
- 1 large onion (diced)
- 3 large carrots (diced)
- 2 stalks celery (diced)
- 5 cloves garlic (minced)
- 2 Tbsp tomato paste
- 5 cups chicken broth
- 2 cups cooked chicken (shredded or chopped)
- 1 lb shelf-stable gnocchi
- 3–4 oz baby spinach
Instructions
- In a large pot over medium heat, heat reserved oil from the sun-dried tomatoes. Sauté onion, carrots, and celery for about 5 minutes until softened.
- Stir in sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper. Sauté for an additional minute.
- Add tomato paste and flour; cook while stirring for about a minute.
- Pour in chicken broth and bring to a simmer; cover partially and simmer for about 15 minutes.
- Add shredded chicken, baby spinach, evaporated milk, and gnocchi to the pot. Cook for another 5–10 minutes until heated through.
- Serve hot topped with grated parmesan cheese if desired.
