- 16 ounces beef (cut into strips)
- 2 large eggs (beaten)
- 1 large carrot (julienned)
- 1 medium yellow onion (thinly sliced)
- 3 mushrooms (thinly sliced)
- 2 cups baby spinach
- 2 stalks green onion (cut into pieces)
- 7 tablespoons soy sauce
- 3 tablespoons honey
- 2 tablespoons brown sugar
- 2 tablespoons toasted sesame oil
Instructions
- Prepare the sauce by mixing soy sauce, honey, brown sugar, and sesame oil in a bowl.
- Boil sweet potato noodles in water for 10–15 minutes until tender; drain and rinse with cold water.
