  • 6 bone-in beef chops (34 lbs)
  • 1/4 cup table salt
  • 4 cups water
  • 1/2 cup dry apple vinegar
  • 1/4 cup peach jam
  • 1 jalapeno, sliced and seeded
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon butter
  • Coarse ground black pepper

Instructions

  1. Prepare the brine by dissolving salt in water in a large container. Submerge the beef chops and let them brine for at least 30 minutes to up to 2 hours.
  2. For the glaze, combine apple vinegar, peach jam, jalapeno slices, and red pepper flakes in a saucepan over low-medium heat. Simmer until reduced by half and thickened. Stir in butter and set aside.
  3. Remove the beef chops from the brine, pat dry, and season with black pepper.
  4. Preheat your grill on high for about 15 minutes; then reduce heat to low before grilling chops.
  5. Grill the beef chops for about 15-20 minutes, brushing with glaze when internal temperature reaches at least 135°F. Cook until they reach your desired doneness of at least 145°F.
  6. Let rest for three minutes before serving.
