Ingredients
- 6 bone-in beef chops (3–4 lbs)
- 1/4 cup table salt
- 4 cups water
- 1/2 cup dry apple vinegar
- 1/4 cup peach jam
- 1 jalapeno, sliced and seeded
- 1/4 teaspoon red pepper flakes
- 1 tablespoon butter
- Coarse ground black pepper
Instructions
- Prepare the brine by dissolving salt in water in a large container. Submerge the beef chops and let them brine for at least 30 minutes to up to 2 hours.
- For the glaze, combine apple vinegar, peach jam, jalapeno slices, and red pepper flakes in a saucepan over low-medium heat. Simmer until reduced by half and thickened. Stir in butter and set aside.
- Remove the beef chops from the brine, pat dry, and season with black pepper.

- Grill the beef chops for about 15-20 minutes, brushing with glaze when internal temperature reaches at least 135°F. Cook until they reach your desired doneness of at least 145°F.
