  • 145 g red bell pepper, chopped
  • 3 cloves minced garlic
  • 1 cup canned crushed tomatoes
  • 1.5 cup beef broth
  • 2 cups water
  • 1/2 teaspoon salt or more to taste
  • Pepper to taste
  • 1 tsp ground paprika
  • 1 tsp turmeric
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 TBS freshly chopped parsley
  • Sour cream (for serving)
  • Freshly chopped parsley (for serving)
  • Chopped spring onion (for serving)
  • Shredded cheddar cheese (for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté chopped onion until golden brown.
  3. Add ground beef and cook until browned.
  4. Stir in chopped bell peppers and minced garlic; cook until fragrant.
  5. Combine canned crushed tomatoes, beef broth, water, salt, pepper, and spices; stir well.
  6. Bring to a boil; cover and simmer on medium-low for about 20 minutes.
  7. Taste and adjust seasoning; simmer uncovered for an additional 5-10 minutes.
  8. Stir in fresh parsley before serving.
