Ingredients

  • 1 bunch (10 oz) spinach
  • 1 clove garlic (minced)
  • 1 stalk green onion (chopped)
  • 2 teaspoons soy sauce
  • 1/8 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Trim the ends of the spinach and cut into 2-inch pieces.
  2. Boil salted water in a pot and blanch the spinach for 30 seconds until just wilted.
  3. Transfer the spinach to an ice bath to cool quickly, then squeeze out excess water.
  4. In a mixing bowl, combine cooled spinach with minced garlic, chopped green onion, soy sauce, salt, sesame oil, and sesame seeds. Stir until well mixed.
  5. Serve immediately as a side dish.
