  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 egg yolk
  • 100 ml warm water
  • 100 g sour cream
  • 100 g crème fraîche
  • 250 g Hokkaido pumpkin
  • 1 red onion
  • 100 g feta cheese
  • 10 walnuts
  • 1 tablespoon thyme

Instructions

  1. Prepare the dough by mixing flour, olive oil, salt, egg yolk, and warm water until combined. Cover with a damp cloth and let it rest for 30 minutes.
  2. Preheat your oven to 220°C (428°F).
  3. In a bowl, mix sour cream and crème fraîche; season with salt, pepper, and nutmeg.
  4. Thinly slice the pumpkin (with skin) and onion. Crumble the feta and roughly chop the walnuts.
  5. Divide the dough into four pieces and roll each piece as thinly as possible. Spread the cream mixture over the dough.
  6. Top with pumpkin slices, onion rings, crumbled feta, and walnuts.
  7. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes until golden brown.
  8. Sprinkle with thyme before serving.
