- 1 egg yolk
- 100 ml warm water
- 100 g sour cream
- 100 g crème fraîche
- 250 g Hokkaido pumpkin
- 1 red onion
- 100 g feta cheese
- 10 walnuts
- 1 tablespoon thyme
Instructions
- Prepare the dough by mixing flour, olive oil, salt, egg yolk, and warm water until combined. Cover with a damp cloth and let it rest for 30 minutes.
- Preheat your oven to 220°C (428°F).
- In a bowl, mix sour cream and crème fraîche; season with salt, pepper, and nutmeg.
- Thinly slice the pumpkin (with skin) and onion. Crumble the feta and roughly chop the walnuts.
- Divide the dough into four pieces and roll each piece as thinly as possible. Spread the cream mixture over the dough.
- Top with pumpkin slices, onion rings, crumbled feta, and walnuts.
- Place on a baking sheet lined with parchment paper and bake for 12-15 minutes until golden brown.
