  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 1 tablespoon milk (optional)
  • 4 large eggs (50 grams each, out of shell)
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. For the crust, cream together unsalted butter and granulated sugar until fluffy. Mix in rolled oats and flour until combined, then press into the bottom of the prepared dish. Bake for 15 minutes until lightly golden.
  3. For the filling, whisk eggs, honey, lemon zest, and lemon juice in a separate bowl. Gradually stir in remaining flour until smooth.
  4. Pour the filling over the pre-baked crust and bake for an additional 20-25 minutes until set.
  5. Let cool completely before slicing into squares.
