- 1 tablespoon olive oil
- 2 cups diced carrots
- 1 cup finely chopped onion
- ½ cup finely chopped celery
- 1 tablespoon minced garlic
- ½ teaspoon black pepper
- ½ teaspoon dried parsley
- ¼ teaspoon dried thyme
- ¼ teaspoon salt
- 2 bay leaves
- 1 ½ pounds boneless, skinless chicken breasts
- 6 cups low sodium chicken broth
- 1 cup dry orzo pasta
- ½ cup fresh squeezed lemon juice
Instructions
- Gather and chop all ingredients before cooking.
- In a large pot, heat olive oil over medium heat. Sauté carrots, onion, and celery for about 5–7 minutes until softened. Add minced garlic and cook for another minute.
- Stir in black pepper, parsley, thyme, salt, and bay leaves.
- Place chicken breasts in the pot and pour in the chicken broth. Bring to a boil then reduce heat to low; cover and simmer for about 30 minutes.
- Remove chicken from the pot and shred with two forks before returning it back into the soup.
- Add dry orzo pasta and cook according to package instructions (about 8–10 minutes).
- Stir in fresh lemon juice just before serving.
