Ingredients
- ½ cup fresh lemon juice
- 1 Tbsp lemon zest
- 4 large egg yolks
- ¾ cup granulated sugar
- ½ cup unsalted butter (cold)
- 2½ cups all-purpose flour
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 large egg yolk
- 1 tsp vanilla extract
- Powdered sugar (for dusting)
Instructions
- Make the Lemon Curd: Whisk together lemon juice, zest, egg yolks, sugar, and salt in a saucepan over medium-low heat until thickened (20–25 minutes). Remove from heat and whisk in butter until smooth. Cool completely.
- Prepare Cookie Dough: Whisk flour, baking powder, and salt in one bowl. Cream softened butter and sugar in another bowl until fluffy. Beat in egg yolk, vanilla extract, and lemon zest. Gradually mix dry ingredients into the wet until just combined. Chill dough for 1 hour.
- Shape and Bake: Preheat oven to 350°F (175°C). Roll chilled dough into balls and place on baking sheets lined with parchment paper. Press a well into each ball and bake for about 10 minutes until edges are golden.
- Fill: While warm, add about 1 teaspoon of lemon curd to each cookie center. Dust with powdered sugar before serving.
