  • 3 tablespoons cornstarch
  • 1/2 cup milk
  • 3 large egg yolks

  • 1 cup fresh raspberries
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 400°F (200°C). In a saucepan, combine water and butter over medium heat until melted. Stir in salt and flour until it forms a ball.
  2. Remove from heat and let cool slightly. Incorporate eggs one at a time, mixing until smooth.
  3. Pipe long strips onto lined baking sheets and bake for 25-30 minutes until golden brown.
  4. For the cream filling, whisk together heavy cream, sugar, cornstarch, milk, egg yolks, lemon juice, and zest in another saucepan. Cook on medium heat while whisking until thickened. Cool completely before using.

  6. Mix powdered sugar with lemon juice for glaze; drizzle over eclairs before serving.
