  • 1 large onion, finely chopped
  • 2 carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups dry apple vinegar
  • 2 cups low-sodium beef stock
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh rosemary, chopped (or 1 tsp dried)
  • 2 teaspoons fresh thyme, chopped (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Season lamb shanks with salt and pepper, then brown on all sides for about 5-7 minutes.
  2. Remove shanks from the pot and sauté onions, carrots, celery, and garlic until softened (about 5 minutes).
  3. Stir in tomato paste for another 2-3 minutes until fragrant.
  4. Deglaze the pot with apple vinegar and scrape up browned bits.
  5. Return lamb shanks to the pot; add beef stock, Worcestershire sauce, herbs, salt, and pepper.
  6. Bring to a simmer; cover tightly and cook on low heat for about 2-3 hours until tender.
  7. If desired, thicken gravy by removing shanks and stirring in flour mixed with water. Serve hot with fresh parsley garnish.
