Instructions

  1. In a mixing bowl, beat room-temperature butter and maple sugar until light and fluffy. Add powdered sugar, mix until combined, then incorporate maple syrup and extract.
  2. In another bowl, whisk together flour, cornstarch, and salt. Gradually add the dry ingredients to the wet mixture until a dough forms. Chill for 30 minutes.
  3. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper. Roll out chilled dough to about 1/8" thick and cut out shapes using a maple leaf cookie cutter.
  4. Bake for 8-10 minutes until edges are lightly golden; cool on wire racks.
  5. For the filling, beat together room-temperature butter, powdered sugar, maple syrup, vanilla extract, and salt until smooth. Assemble cookies by spreading filling between two cooled cookies.
