Ingredients
- 100 g softened unsalted butter
- 100 g caster sugar
- 65 g light brown soft sugar
- 1 large egg
- 1 tsp vanilla extract
- 215 g plain flour
- 1/2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 1/4 tsp salt
- 100 g milk chocolate chips
- 100 g mini eggs (crushed)
- 125 ml double cream
- 125 g dark chocolate
- 15 g butter
- 36 mini eggs
Instructions
- Preheat your oven to 180°C Fan/Gas Mark 6. Grease a 12-hole cupcake tin with butter and line it with baking paper.
- In a stand mixer, beat the softened butter with both sugars until fluffy.
- Add the egg and vanilla extract; mix until combined.
- In another bowl, whisk together the flour, baking powder, bicarbonate of soda, and salt. Gradually mix into the wet ingredients until just combined.
- Fold in the milk chocolate chips.
- Divide dough into 12 equal portions (about 62g each) and shape into balls. Place in the cupcake tin and press to create cups.
- Bake for about 12 minutes or until golden brown. Press down centers immediately after removing from oven.
- For the ganache, microwave dark chocolate with double cream and butter until smooth.
- Cool slightly before filling cookie cups with ganache and top with mini eggs.
