Ingredients
- 1 package (17 oz) store-bought puff pastry, thawed
- 1 ¼ cups pumpkin puree (drained)
- ¼ cup light brown sugar
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 ½ teaspoons cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon nutmeg
- 1/8 teaspoon allspice
- 2 egg yolks
Instructions
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a mixing bowl, combine drained pumpkin puree, brown sugar, granulated sugar, vanilla, cinnamon, ginger, nutmeg, allspice, and egg yolks. Mix until well blended.
- On a floured surface, roll out the puff pastry sheets. Spread half of the pumpkin filling on each sheet.
- Cut each sheet into triangles about 2¾ – 3 inches wide at the base and roll them into crescent shapes.
- Place on the prepared baking sheet with space between each roll.
- Bake for approximately 15 minutes or until golden brown. Serve warm.
