  • 2 tablespoons olive oil
  • 1/4 cup white miso paste
  • 2 tablespoons rice vinegar (as a non-alcoholic substitute for mirin)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Sesame seeds (optional garnish)
  • Chopped green onions (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the eggplant into 1-inch cubes and toss them with olive oil, salt, and pepper on a baking sheet.
  3. Roast the eggplant for 20-25 minutes until tender and lightly browned, flipping halfway through.
  4. Meanwhile, in a mixing bowl, whisk together the miso paste, rice vinegar, soy sauce, honey, ginger, and garlic until smooth.
  5. Once the eggplant is done roasting, brush the miso glaze over the cubes and return to the oven for an additional 5-7 minutes until bubbly.
