  • 1 cup vegetable broth
  • 2 grated carrots
  • 1 can chickpeas (15 ounces)
  • 1/2 finely chopped red onion
  • 1/4 cup raisins
  • 1/4 cup fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp ground coriander

Instructions

  1. In a saucepan, boil vegetable broth. Remove from heat and stir in couscous. Cover and let sit for 5 minutes.
  2. Fluff couscous with a fork and transfer to a large bowl. Add grated carrots, chickpeas, red onion, raisins, and parsley; toss gently.
  3. Whisk together olive oil, lemon juice, cumin, coriander, cinnamon, ginger, salt, and pepper in a small bowl.
  4. Pour dressing over the couscous mixture and toss until well coated.
