Ingredients
- 5 small-medium onions (sliced)
- 1.5 cups green or brown lentils
- 1 cup brown rice (or white rice)
- 5–5½ cups water (divided)
- 1 tbsp veggie bouillon powder
- 1½ tsp salt (divided)
- 1 tsp ground cumin
- 2 bay leaves
- Black pepper (to taste)
- 2 tbsp olive oil
Instructions
- Soak the brown rice in water for about 20 minutes, then drain.
- In a large pot, combine soaked rice with 2½ cups of water. Bring to a boil, add veggie bouillon, 1 tsp salt, black pepper, and bay leaves. Reduce heat, cover, and simmer for 20 minutes.
- While rice cooks, soak and drain lentils.
- Slice onions thinly.
- After 20 minutes, add drained lentils to the pot with an additional 3 cups of water. Stir and cover; simmer for another 25 minutes.
- In a skillet with olive oil over medium heat, caramelize onions until golden brown (about 15-20 minutes).
- Check if lentils and rice are tender; adjust cooking time if needed.
- Remove bay leaves from the pot. Mix in two-thirds of caramelized onions into the lentil-rice mixture and reserve the rest for garnish.
