Ingredients
- 1 cup (220g) caster sugar
- 300ml water
- 100ml fruit juice substitute for limoncello
- 300g blueberries
- 1/2 tsp arrowroot
- 5 eggs, separated
- 250g mascarpone
- 1/3 cup (4 tbsp) lemon curd
- 1/2 pandoro or 1 Madeira cake, cut into 2cm-thick slices
- Whipped cream, to top
Instructions
- Create the syrup by combining caster sugar and water in a saucepan over low heat until dissolved. Simmer for 5 minutes and mix with fruit juice.
- Cook blueberries in the syrup for 2 minutes, then thicken with arrowroot mixed in cold water.
- Beat egg yolks with sugar until thick, then combine with mascarpone and lemon curd.
- Whip egg whites until soft peaks form and fold into the mascarpone mixture.
- Layer cake slices in a glass dish, brushing each layer with syrup. Alternate between mascarpone mixture and blueberry mixture for three layers.
- Chill for at least 4 hours before serving topped with whipped cream and reserved blueberries.
