Ingredients
- 1 salmon fillet
- 1 soft-boiled egg
- 1 cup sweet potato, cubed & roasted
- ½ avocado, diced
- 1 tbsp crumbled feta cheese
- 1 tbsp roasted chickpeas
- ½ cup cherry tomatoes, halved
- Cucumber slices
- 2 tbsp red onion, thinly sliced

Instructions
- Boil the egg for 7 minutes; transfer to cold water to cool before peeling.
