  • 1 cup pitted dates
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest and juice of 2 oranges
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch cake tin.
  2. In a bowl, combine flour, baking powder, cardamom, and salt.
  3. In another bowl, cream softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, orange zest, and juice.
  4. Fold in chopped dates gently into the wet mixture.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. Pour batter into the prepared tin and bake for 40–45 minutes or until a toothpick comes out clean.
  7. For the honey drizzle, warm honey with orange juice in a saucepan until combined.
  8. Drizzle over warm cake after baking and allow to cool before serving.
