Ingredients
- 4 chicken breasts (about 600g)
- 2 tbsp olive oil
- Salt & pepper, to taste
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 200g mushrooms, sliced
- 2 garlic cloves, minced
- 1 tbsp flour
- 250ml chicken stock
- 1 tsp dried thyme
- 800g potatoes, peeled and cubed
- 50g butter
- 100ml milk
Instructions
- Prepare the mashed potatoes: Boil cubed potatoes in salted water until tender. Drain and mash with butter and milk until creamy; season with salt and pepper.
- Sear the chicken: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for about 6-7 minutes per side until golden brown. Remove from skillet and set aside.
- Make the gravy: In the same skillet, sauté onions, peppers, and mushrooms until softened (about 5 minutes). Add minced garlic, then sprinkle flour over vegetables; stir well. Gradually add chicken stock while stirring continuously; add dried thyme and simmer until thickened (about 5-7 minutes). Return chicken to the skillet to coat with gravy.
