  • 4 chicken breasts (about 600g)
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 200g mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 tbsp flour
  • 250ml chicken stock
  • 1 tsp dried thyme
  • 800g potatoes, peeled and cubed
  • 50g butter
  • 100ml milk

Instructions

  1. Prepare the mashed potatoes: Boil cubed potatoes in salted water until tender. Drain and mash with butter and milk until creamy; season with salt and pepper.
  2. Sear the chicken: Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for about 6-7 minutes per side until golden brown. Remove from skillet and set aside.
  3. Make the gravy: In the same skillet, sauté onions, peppers, and mushrooms until softened (about 5 minutes). Add minced garlic, then sprinkle flour over vegetables; stir well. Gradually add chicken stock while stirring continuously; add dried thyme and simmer until thickened (about 5-7 minutes). Return chicken to the skillet to coat with gravy.
  4. Serve: Plate slices of chicken topped with gravy alongside creamy mashed potatoes.
