Ingredients
- 900g ground chicken
- 60g seasoned breadcrumbs
- 30g grated Parmesan cheese
- 120ml marinara sauce
- 120g shredded mozzarella cheese
- 2 garlic cloves, minced
- 80g finely diced onion
- 1 egg
- 2 tablespoons olive oil
- 2 teaspoons milk
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- 3 mozzarella cheese strings, cut into 1cm slices
- 2 tablespoons panko breadcrumbs
- 20g grated Parmesan cheese
- 1 tablespoon butter, melted
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 200°C (400°F). Line a baking sheet with foil and spray with cooking spray.
- In a frying pan over medium heat, sauté the onion and garlic in olive oil until softened; allow to cool.
- In a large bowl, mix cooled onion mixture, ground chicken, breadcrumbs, milk, Parmesan cheese, egg, chopped parsley, Italian seasoning, and salt until just combined.
- Form two-thirds of the mixture into a loaf shape on the baking sheet. Place mozzarella strips down the center and cover with remaining mixture.
- Spread marinara sauce on top and bake for 45 minutes.
- Combine panko breadcrumbs with melted butter and Parmesan in a bowl; set aside.
- Top meatloaf with shredded mozzarella and breadcrumb mixture; return to oven for an additional 15-20 minutes until golden brown.
- Let rest for 10 minutes before slicing.
