Ingredients

  • 1 pound brussels sprouts, shredded
  • 2 cups sliced peaches
  • ⅓ cup sliced almonds
  • ¼ cup raw pepitas (pumpkin seeds)
  • 1 batch tahini poppy seed dressing (tahini, lemon juice, maple syrup, Dijon mustard, poppyseeds, onion powder, salt)

Instructions

  1. In a small bowl, prepare the tahini dressing by mixing together tahini, lemon juice, maple syrup or honey, Dijon mustard, poppyseeds, onion powder, salt, and water to thin.
  2. Shred the brussels sprouts using a food processor or sharp knife.
  3. Place the shredded brussels sprouts in a large bowl and pour the tahini dressing over them. Toss well to coat and let marinate for 10-15 minutes.
  4. In a skillet over medium heat, toast the sliced almonds and pumpkin seeds for 3-5 minutes until golden brown. Add maple syrup and sea salt; stir to coat and cool on a plate.
  5. Combine the marinated brussels sprouts with sliced peaches and nut mixture; toss gently and serve.
