  • 4 cups baby arugula
  • 2 ripe peaches
  • 8 ounces burrata (4 balls, 2 ounces each)
  • 1/4 cup pistachios (salted & roasted)
  • 3 tablespoons red onion, minced
  • 1/3 cup chicken sparkling grape juice vinegar
  • 1/2 cup extra virgin olive oil (mild & neutral)
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • Salt, pepper, and chili flakes (to taste)

Instructions

  1. Crush the pistachios using a mortar and pestle or place them in a zip-lock bag and crush with a rolling pin.
  2. Wash, dry, and slice the peaches thinly; set aside.
  3. Finely mince the red onions.
  4. For the dressing, mix olive oil, minced red onion, chicken sparkling grape juice vinegar, honey, dijon mustard, salt, pepper, and chili flakes in a jar or bowl until emulsified.
  5. On a serving platter or in a large bowl, layer the baby arugula, sliced peaches, and torn burrata pieces.
  6. Drizzle with dressing and garnish with crushed pistachios. Serve immediately.
