  • 1/2 cup peach jam
  • 3 large peaches, thinly sliced
  • 1 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground ginger (optional)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 stick butter, melted (1/2 cup)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Make the shortbread crust by combining softened butter, brown sugar, salt, and flour until crumbly. Press into a greased 9×13 inch baking dish and bake for 15 minutes.
  3. For the cheesecake layer, beat cream cheese and granulated sugar until smooth. Add sour cream, eggs, and vanilla; mix well. Pour over the baked crust.
  4. Layer sliced peaches on top of the cheesecake mixture and drizzle with peach jam.
  5. Prepare the cobbler topping by mixing flour, sugars, cinnamon, and melted butter until crumbly; sprinkle over the peach layer.
  6. Bake for 35–40 minutes until lightly browned on top. Cool completely before slicing.
