- 2½ cups crushed pretzels
- ¾ cup granulated sugar
- ¾ cup melted butter
- 12 ounces cream cheese
- 2 teaspoons vanilla extract
- 12 ounces Cool Whip
- 6 ounces peach vegan gelatin
- 4 cups fresh peaches, peeled and diced
- 2 cups boiling water
- 2 cups ice water
Instructions
- Preheat the oven to 350°F and lightly butter a 9×13 baking pan.
- In a medium bowl, mix crushed pretzels, ¾ cup sugar, and melted butter. Press into the bottom of the prepared pan.
- Bake the crust for 10 minutes; let it cool completely.
- In a large mixing bowl, beat cream cheese with remaining sugar and vanilla until smooth. Fold in Cool Whip and spread over the cooled crust.
- Dissolve peach vegan gelatin in boiling water; add ice water once dissolved. Stir in diced peaches and refrigerate for about 15 minutes until it thickens slightly.
- Pour the jello mixture over the cream cheese layer. Cover with plastic wrap and refrigerate for at least two hours or until set.
