Ingredients

Scale
  • 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 6 tablespoons cold unsalted butter, (into 1/4-inch cubes)
  • 1 cup heavy cream, (plus 1 tablespoon for brushing the scones)
  • ½ teaspoon pure vanilla extract
  • 1 cup diced fresh peeled peaches
  • 1 cup confectioners’ sugar
  • 1 tablespoon honey
  • ½ teaspoon pure vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Cut in the cold butter until the mixture resembles coarse meal.
  4. In another bowl, mix heavy cream and vanilla extract; pour into the dry ingredients and gently stir until combined. Fold in diced peaches.
  5. Transfer the dough to a floured surface, shape it into a 1-inch thick circle, and cut into triangles.
  6. Freeze shaped scones for 15-20 minutes before baking them for 18 to 23 minutes until golden brown.
  7. While cooling, prepare glaze by whisking together confectioners’ sugar, honey, vanilla extract, and milk until smooth; drizzle over scones.
