  • 250g diced chicken breast
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 medium onion, roughly chopped
  • 2 tbsp soy sauce
  • 1 tbsp mushroom sauce
  • 1 tbsp crushed chili flakes
  • 1 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 tbsp cooking oil (vegetable or sesame)
  • 1 cup basmati rice
  • 2 cups water
  • A pinch of salt

Instructions

  1. Prepare the rice by washing it under cold water until clear. Combine with water and salt in a saucepan, bring to a boil.
  2. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Let sit covered for 5 minutes before fluffing.
  3. In a wok or large frying pan, heat oil over medium-high heat. Sauté minced garlic until fragrant.
  4. Add diced chicken and cook until golden brown. Mix in onion and bell peppers; stir-fry for about 3-4 minutes until vegetables are tender-crisp.
  5. Pour in soy sauce, mushroom sauce, chili flakes, and black pepper; toss everything together.
  6. Serve immediately over fluffy rice.
